Speedy Garlic Lamb Wrap

Lamb neck fillet cooks really quickly, but make sure you cut off any fat to keep the calorie count down.
Preparation Time: 10 minutes
Cooking Time: 15 minutes
Per Serving: 567 calories, 17g fat (5g saturated), 74g carbs.
1tsp olive oil
400g lamb neck fillet, cut into chunks
1 garlic clove, crushed
1 red onion, peeled and sliced
Pack of 8 tortillas
¼ white cabbage, shredded
1 large carrot, cut into strips with a peeler
½ cucumber, chopped
200g carton reduced-fat guacamole
Step 1 – Heat the oil in a large frying pan, add the lamb and the garlic and fry to 5 minutes, stirring occasionally.
Step 2 – Add the onion and cook for 5 more minutes, until the meat and onion are cooked.
Step 3 – Warm the tortillas in a microwave, according to the packet instructions.
Step 4 – Tip the lamb and onion into a sieve over a bowl to drain off the fat. Then serve it in a hot bowl.
Step 5 – Make up wraps with the lamb, cabbage, carrot and cucumber, adding a few dollops of guacamole. Finally roll them and serve.
