Protein Recipe: Blueberry Muffins

 

 

Sometimes when dieting, keeping away from those sweet goodies can be more difficult than you expected! Protein powder can also be boring when you only ever use it for shakes, this is why we are going to spice things up…( preferably sweeten) Continue reading to learn how to make yourself some yummy blueberry protein muffins!

Ingredients:

2/3 cup of fresh blueberries

2 eggs

1/2 tsp baking soda (all purpose)

1/2 tsp baking powder

1/2 cup of vegetable oil

1/4 cup of brown sugar

1/2 cup of protein powder (strawberry/chocolate)

1/4 tsp of ground cinnamon

1 & 1/2 cups of flour whole wheat

 

8 simple steps:

1. The first step is to pre-heat the oven to 375F

2. Grab your muffin tray and line it with muffin liner cups

3. Use non-stick cooking spray to spray them down

4. Mix the eggs and vegetable oil in a bowl

5. In a separate bowl, mix the baking soda, baking powder, brown sugar, ground cinnamon, flour whole wheat and the protein powder

6. Combine both mixtures along with the blueberries into the muffin tin

7. Pop your muffins into the oven and bake for 20-25 minutes (until the muffin tops are golden brown)

8. Once they’re out of the oven, leave them to cool for 10-15 minutes and then they’re ready to eat!
