Low Fat Recipes: Potato Salad

potato-saladThe perfect side dish to accompany any meal.

Potato salad:

 

*Serves 4. Preparation time 5 minutes. Cooking time 30 minutes.*

Level: **

 

Ingredients:

3 chopped hard boiled free range eggs

Salt

450g of new potatoes (chopped)

230g of fat free cottage cheese

2 teaspoons of dried dill

A bunch of spring onions (chopped)

2 level tablespoons of reduced- fat salad cream

Salad leaves

Low fat recipes for comfort food!

Method:

  1. Put the chopped potatoes into a pan and cover with water
  2. Add a pinch of salt and bring to the boil
  3. Simmer for 20 minutes until tender
  4. Drain and allow to cool
  5. Place the cottage cheese into a blender and purée
  6. Once blended, transfer to a bowl
  7. Add the potatoes
  8. Also add the chopped spring onions, the chopped eggs and 2 teaspoons of dried dill
  9. Mix together whilst adding the salad cream
  10. Once mixed together, serve with crisp salad leaves
