Pancake day the protein way!

whe-proteinThere’s no denying it, I absolutely LOVE pancakes, not a huge fan of the savoury sort but give me a plain pancake dusted in sugar any day of the week and I’m a happy gal.

 

For those of you on a health kick I guess pancakes might feel like a no-go but you can whip yourself up some totally healthy versions packed full of protein, and the kids will love them!

 

Arm yourself with your trusty non-stick frying pan, get the family in kitchen and cook up your own perfect pancakes in no time at all following these great easy whey protein recipes.

 

 

Easy Peasy No Whey Two-Ingredient Pancakes

Ingredients

  • 1 whole egg
  • 2 egg whites
  • 1 small ripe banana

Method

  1. Mash the banana and crack in the eggs, stirring until the mixture is thoroughly combined.
  2. Heat your non-stick frying pan on a medium heat, spray with 1 cal spray and pour in about a 2.5-inch wide puddle of batter.
  3. Delicately flip the pancake after about 25 seconds or when it browns.

This recipe makes 3-4 small pancakes.

 

Skinny Chocolate Banana Oatmeal Pancakes

Ingredients

  • 4 eggs
  • 2 ripe bananas
  • 45g rolled oats
  • 1 scoop of best of you vanilla whey protein powder
  • 2 tablespoons cocoa powder
  • 1 teaspoon cinnamon
  • diced strawberries
  • honey
  • pinch of stevia

Method

  1. Combine the eggs, bananas, oats, protein powder, cocoa powder, and cinnamon in a blender or food processor. Pulse for a few seconds until everything is smooth.
  2. Heat your non-stick frying pan on a medium heat, spray with 1 cal spray and pour in about a 2.5-inch wide puddle of batter. Cook the first side until bubbles appear over the top of the pancake. Flip carefully and cook the other side for about a minute. Serve hot with a little stevia and diced strawberries mixed with honey

This recipe makes 8 – 10 pancakes.

Whey protein is so versatile!

 

Vanilla Blueberry Cake Protein Pancakes
Ingredients

Pancakes

  • 1 scoop of best of you vanilla whey protein powder
  • 25g oat flour
  • 2 egg whites
  • 60ml almond milk
  • 35g blueberries
  • 1 tablespoon cashew butter

 

Blueberry Jam

  • 110g blueberries
  • 2 tablespoons sugar-free maple syrup

 

Vanilla Glaze

  • ¼ scoop of best of you vanilla whey protein powder
  • 2 tablespoons almond milk

 

Method

 

  1. Heat your non-stick pan over medium heat.
  2. In a blender or food processor, blend together egg whites, 60ml almond milk, 35g blueberries and cashew butter until smooth. Pour into a mixing bowl.
  3. Add 1 scoop protein powder and oat flour to the mixing bowl and whisk until smooth.
  4. Pour about a 2.5-inch wide puddle of batter into the pan, and cook on each side for about 2-3 minutes or until golden brown.
  5. For the jam, heat 110g blueberries and maple syrup in a saucepan over medium heat, stirring occasionally, for about 8 minutes.
  6. For the glaze, stir together ¼ scoop protein powder and 2 tablespoons almond milk until smooth.
  7. Spoon the jam and glaze on top of the pancakes. Enjoy!

 

Makes 1 serving

1 serving is 5 pancakes with toppings
