Low Fat Green Fritters & Avocado Salsa

Recipe: Low Fat Green Fritters & Avocado Salsa

*This low fat recipe makes 4 fritters. It can be made with any combo of green vegetables! E.g. broccoli, kale or spring onions. It can also be made with sweetcorn/peas and chopped spinach!*

 

Ingredients:

For the fritters:

  • 2 Eggs
  • 6 tbsp edamame beans (not in their pod, get frozen ones)
  • A handful of fresh baby spinach leaves, roughly chopped
  • 1 tbsp chia seeds
  • 2 tbsp coconut flour
  • Zest of a lime
  • Juice of half a lime
  • Salt and pepper
  • 1 tsp dill
  • Coconut oil for cooking (1/2 tsp per 2 pancakes)
  • 1/2 tsp baking powder

Avocado salsa:

  • 6 cherry tomatoes, chopped finely
  • 1 avocado, diced
  • Handful of fresh coriander (optional)
  • 1 red chilli, finely chopped (optional)
  • Juice of half a lime
  • Salt and pepper

 

Method:

Make the fritter mix:

1. Beat the eggs in a bowl and stir in the coconut flour aswell as the salt, pepper, lime zest, dill and lime juice.

2. Add the chia seeds, spinach and edamame beans and stir well. Set aside.

 

Make the avocado salsa:

3. Finely chop the avocado, cherry tomatoes and mix together in a bowl.

4. Add the lime juice and the salt and pepper. Stir well and set aside.

5. In a good non-stick frying pan, heat a little coconut oil until hot and add a heaped teaspoon of the mixture on each half of the pan.

6. Allow to cook through properly on the one side, before flipping to cook through the other side.

7. Serve straight away with the avocado salsa.

 

*Keep the fritters warm in the oven until you have cooked the other two fritters, if eating them all in one serving!*
