Lemon Herb Chicken Recipe

A simple chicken recipe designed for those who want to do something different with chicken! Whether it’s a snack or for something on the go, give it a try! Make it a meal by serving with some low-fat potatoes or chilli wedges!

 

Ingredients:

  • 1 lemon
  • 1 tbsp olive oil
  • salt and pepper
  • 2 chicken breast halves
  • handful of fresh parsley
  • Mixed salad leaves
  • Pepper *colour of choice*

 

Method:

  • Cut lemon in half
  • Squeeze the juice from the lemon over the chicken breast halves
  • Season for taste
  • Heat the olive oil in a small skillet over medium low heat
  • When the oil is hot, place the chicken in skillet
  • Add the juice from the other half of the lemon
  • Saute for 5-10 minutes on each side until the juices run clear
  • Once cooked, sprinkle over the parsley for garnish
  • Grab a large mixing bowl and put in some salad leaves
  • Chop up some pepper and add that in, mixing as you do so
  • Once the chicken has cooled, slice into thin strips
  • Gradually add that to the mixing bowl
  • For extra flavour, you can add a dressing to your dish.

 

Mediterranean Dressing:

  • Whisk 1 tbsp of red wine vinegar and:
  • 1 teaspoon of dijon mustard
  • 1/2 teaspoon kosher salt
  • Pepper to taste
  • Gradually whisk in 1/3 cup of olive oil
  • Mash in some crumbled feta cheese
  •  Also add 1 tsp of dried oregano
  • & 1/2 of a diced tomato

     

     

    Drizzle over the salad, mix well and enjoy!
