Healthy Salad Recipes

Rocket and Grape Salad
To make the base of the salad, combine 175g of rocket, 50g of halved red grapes, 2 tablespoons of sunflower seeds, and 1 teaspoon of finely chopped thyme.
To make the dressing, combine 3 tablespoons of red wine vinegar, 1 teaspoon of honey, 1 teaspoon of maple syrup, and ½ teaspoon of ground mustard. Slowly add 2 teaspoons of grapeseed oil, mixing with a whisk.
Next, drizzle the dressing over the salad mixture and then add a dash of salt and pepper to taste. Gently toss the salad to coat it in the dressing for a delicious and nutritious summer salad.
Savoury Melon and Granola Salad
To make the granola, preheat the oven to 175 degrees celcius, place baking paper onto a baking sheet, and then spray the sheet with cooking spray. Then, combine 1 egg white with a pinch of salt and whip with a whisk until it gets frothy. Add 70g sunflower seeds, 35g cup of rolled oats, 2 tablespoons sesame seeds, 1 ½ teaspoons fennel seeds, 1 teaspoon chili powder, and 1 tablespoon of sugar. Stir until the mixture is coated in the egg white mixture. Then, bake in the oven for 10 minutes, stir it once, continue cooking for an additional 5 minutes, then take out of the oven and allow to cool completely.
To make the dressing, combine 2 tablespoons of extra-virgin olive oil, 2 tablespoons of balsamic vinegar, and ½ teaspoon of honey. Stir them with a whisk until well-blended.
To put it all together, add about 180g of sliced cantaloupe or honeydew melon on a total of 8 plates. Top each melon with 1 ½ teaspoons of the dressing, 1 ½ tablespoons of granola, and 1 tablespoon of freshly torn basil leaves for a sweet summer salad.

Lettuce and Potato Salad
To prepare the onions, mix 160g of red onions, thinly sliced, with 3 tablespoons of cider vinegar.
To prepare the potatoes, place 115g of salad potatoes in a medium saucepan, then fill with water to 5 centimeters above the potatoes. Bring the water to the boil, then reduce the heat and allow them to simmer for 15 minutes or until the potatoes are tender. Pull the potatoes out with a slotted spoon and allow them to cool slightly before thinly slicing them.
To prepare the green beans, bring the water from the potatoes back to the boil. Then, add 115g of trimmed green beans and cook them for 3 minutes or until crisp. Drain the water from the beans and rinse them under cold water.
To prepare the vinaigrette, cook 1 thick slice of bacon over medium heat until it is crisp or for about 6 minutes. Remove the pan from the heat and add just the vinegar from the onions, 1 tablespoon of extra-virgin olive oil, 1 teaspoon of Dijon mustard, and a dash of salt and pepper. Mix them together with a whisk.
To put everything together, cut 1 head of little gem lettuce into 4 wedges and place one on each plate. Then, add the onions, potatoes, green beans, 3 thinly sliced radishes, and 1 tablespoon chopped chives to the plates. Drizzle everything in the bacon vinaigrette for this great summer salad.
