Egg Recipe: Filled With Homemade Guacamole

Boiled eggs filled with homemade guacamole, egg yolk and watercress

Ingredients:

Eggs stuffed with guacamole:

  • Fresh lime (optional)
  • Salt and pepper
  • 3 large hard boiled eggs
  • 1 large avocado
  • 4 cherry tomatoes

Eggs stuffed with egg yolk and watercress:

  • Fresh watercress
  • Salt and pepper
  • 3 large hard boiled eggs
  • 1 tbsp Greek yoghurt
  • English/Dijon mustard (optional)

 

Method:

  • Make sure the eggs have been left out of the fridge, putting them into boiling water straight from the fridge can cause them to crack!
  • If you are taking them straight from the fridge, place the eggs in some warm water first whilst you bring the water in the pan to the boil.
  • Place the eggs in a pan of boiling water and cook for 10 minutes.
  • Drain and immerse in cold water.
  • Leave to cool, meanwhile, scoop the avocado into a bowl and finely chop the cherry tomatoes and add to the avocado.
  • Season with salt and pepper and mash together.
  • You can add some fresh lime juice if you want to!
  • Remove the eggs from the cold water and peel the shells off.
  • Cut the eggs in half, lengthways and scoop the hard egg yolk into a seperate bowl.
  • Do one egg first, just in case the yolks are not solid!
  • In which case boil again for a further 2-3 minutes.
  • Mix the egg yolks with a tablespoon of Greek yoghurt, some chopped water cress, a teaspoon of mustard (optional) and some salt and pepper.
  • Fill half of the eggs with the guacamole and half of the eggs with the egg yolk mixture.
  • Eat straight away or store in the fridge for up to 1 day.
