Skinny Dinners – Toulouse Sausage

Want to effortlessly lose weight and still eat divinely appetizing food? Try this delicious Toulouse sausage recipe which contains only 275 calories and takes only 30 minutes to prepare.  It looks so professional, yet it’s dead easy!

This scrumptious weight loss recipe serves 4.

Ingredients
– 115g/4oz plum tomatoes
– 7g/1/4oz flat leaf parsley, chopped
– Small garlic clove, chopped
– 1  ½ tsp rosemary, chopped
– 2tsp lemon juice
– 5tsp extra virgin olive  oil
– 500g/1lb3oz Toulouse sausage, cooked
– 4 eggs

Method
Step 1 – Make a tomato sauce by finely dicing tomatoes (with seeds). Add parsley, garlic and rosemary, mix with lemon juice, season and bubble gently in a pan until warmed through.
Step 2 – Slice sausage at an angle – about 2cm/1in thick and 5cm/2in long diagonally. Pan-fry (or grill) for 1-2 minutes each side, until lightly coloured.
Step 3 – Soft poach the eggs. Place the sausage on a warm plate in a circle and rest the poached egg in the middle of it.
Step 4 – Pure over the tomato dressing and serve with a green salad.
