Skinny Dinners – Lamb Steaks with Mint Relish

Want a simple way to lose weight and still eat delicious food? Try this easy to prepare lamb skinny dinner which contains only 223 calories along with 14.5g of fat, 2.2g of sugar and 0.9g of salt.

This tasty healthy slimming recipe serves 6.

Ingredients
– 25-30g fresh mint chopped
– 1 small red onion, chopped
– 1 tbsp lemon juice
– 3 tbsp rapeseed or olive oil
– 6 thin lamb leg steaks
– Salt and ground black pepper
– Zest of 1 lemon
– 280g jar roasted peppers, drained and cut into quarters
– 50g feta cheese, crumbled
– Green salad, to serve

Method
Step 1 – To make the mint relish, mix together the mint, red onion, lemon juice and 2tbsp of the oil, then cover and set aside.
Step 2 – Season both sides of the steaks with the salt and pepper and sprinkle with the lemon zest, then brush with the remaining oil.
Step 3 – Cook on the barbecue or under a moderate preheated grill for 2-3 minutes on each side.
Step 4 – Top with the roasted peppers and feta, then spoon over the relish and serve with a green salad.
