How to make cauliflower rice for low-carb diets
The perfect solution for people who love rice, but want to reduce their carb intake. Good news, cauliflower rice is your new best friend! Plus, it’s one of your 5-a-day.
It’s super simple to make and, when fried and added to your usual sauce, most people can’t tell the difference.
Ingredients: 1 medium cauliflower – around 5-6 inches in diameter or roughly 575g.
Serves: 4 as a side, or 2 as a main.

Remove the leaves from your cauliflower.
Lay it upside down on your chopping board and remove the stalk.
Roughly chop your cauliflower into florets.
Attach the knife blade to your food processor and add the cauliflower florets.
Whizz to a fine, breadcrumb-like consistency.
Cook your cauliflower rice in the microwave until soft. Do not add extra water.
Fry your cauliflower rice to give it a crisp finish. You could even fry it with egg for a healthy spin on egg fried rice.
Serve your cauliflower rice with your usual meal, or stir a sauce/dressing through for a rice-like salad.
